About the knife series
The Alpha knife series from Güde traditional Solingen blacksmithing with fine natural materials. The blades are hand-forged from a single piece of chrome-vanadium-molybdenum knife steel, are stainless, ice-hardened to 57-58 HRC, and hand-sharpened—each knife undergoes over 40 manual steps. The ergonomic handle scales are made from beautifully grained American walnut wood and triple-riveted, with the middle palm rivet made of aluminum Güde the characteristic Güde trademark. The distinctive double bolster at the end of the handle ensures optimal balance and enables fatigue-free work with maximum precision.

Franz Güde has been manufacturing in Solingen since 1910. Solingen has been manufacturing knives using traditional handcrafting techniques. For four generations, this family-owned manufacturer has combined traditional blacksmithing with the highest quality standards – each knife is unique and has a soul of its own.
The master craftsmen in Solingen have mastered their craft down to the last detail: from forging the blade steel to precision grinding and final polishing, every Güde is carefully handcrafted. This uncompromising workmanship guarantees exceptional sharpness and durability.
With a Güde, you hold a piece of German blacksmithing tradition in your hands—a tool that will accompany you throughout your life and inspire you every day.
The Güde Dao Walnut from the exclusive Alpha series combines traditional Solingen craftsmanship with state-of-the-art precision and is a versatile chef's knife for Asian cuisine. The hand-forged blade made of high-alloy chrome-vanadium-molybdenum steel is created in up to 55 manual steps and guarantees exceptional sharpness and durability. With its 16 cm long, wide blade, the Chai Dao is perfect for quickly chopping, cutting, and mincing meat, fish, vegetables, and herbs—ideal for wok dishes and fine kitchen work. The ergonomically shaped handle made of fine walnut wood fits comfortably in the hand, ensuring perfect balance and a high-quality feel. Thanks to the robust and carefully crafted materials, the knife remains durable even with intensive use. Each piece is unique and meets the highest standards of function and aesthetics. Invest in a handmade Solingen masterpiece that will enrich your kitchen with a tool that will delight connoisseurs and gourmets alike.
Pro tip:
Use the wide blade of the Chai Dao not only for cutting, but also for pressing and crushing garlic or ginger, as well as for effortlessly transferring chopped ingredients directly from the cutting board to the wok—the flat side of the blade serves as a practical scoop. Before each use, briefly run the knife over a sharpening steel (at least 26 cm, at a 15-20 degree angle) to maintain its exceptional sharpness[1][7].
The Güde Dao Walnut is the perfect choice for anyone who values versatile kitchen tools and wants first-class results when cutting, chopping, and mincing.
The characteristic wide and slightly curved blade allows you to effortlessly prepare meat, fish, crunchy vegetables, or fresh herbs with quick, flat chopping movements and a rocking cutting technique—ideal for preparing Asian dishes and sophisticated wok creations.
Thanks to the generous blade width, the chopped ingredients can be picked up particularly comfortably and placed directly into the pan, pot, or wok—a real added value in everyday use.
Speaking of creativity: the Chai Dao Walnut also proves its worth outside of classic Asian cuisine, for example when finely chopping herb mixtures for Mediterranean dishes, cutting fruit for salads, or even cutting different ingredients for colorful bowls.
The sturdy, elegant walnut handle fits comfortably and securely in the hand, allowing you to cut for longer without fatigue. With this all-rounder, you are investing in a precise, durable tool that not only makes your preparation steps more efficient, but also more creative, taking your everyday cooking to a new level.
