The Alpha series from Güde combines traditional blacksmithing with the natural beauty of centuries-old olive wood. Each knife is made from high-quality CMV steel in up to 55 manual steps, ice-hardened to 57-58 HRC, and sharpened by hand—for exceptional sharpness and durability. The handles, made from 100 to 500-year-old olive wood, have a strong grain, are particularly hard, and make each knife unique. The classic forged double bolster and ergonomic handle shape ensure perfect balance and fatigue-free working. Please note: These high-quality knives should only be cleaned by hand to protect the precious olive wood.
