About the knife series
The Alpha series from Güde combines traditional blacksmithing with the natural beauty of centuries-old olive wood. Each knife is made from high-quality CMV steel in up to 55 manual steps, ice-hardened to 57-58 HRC, and sharpened by hand—for exceptional sharpness and durability. The handles, made from 100 to 500-year-old olive wood, have a strong grain, are particularly hard, and make each knife unique. The classic forged double bolster and ergonomic handle shape ensure perfect balance and fatigue-free working. Please note: These high-quality knives should only be cleaned by hand to protect the precious olive wood.

Güde, a family business founded in 1910, bears the hallmarks of consistent craftsmanship: the knives are Solingen in Solingen in up to 55 manual steps—steel is forged and hardened, blades are ground, and handles made from carefully selected materials are assembled, a process that showcases Solingen's blacksmithing skills.
When cutting, you immediately feel the precise balance, the warm feel of the handle, and the smooth cutting action; here, traditional techniques meet modern testing and manufacturing standards, so that tradition and innovation merge into a tangible experience.
The Alpha X805/10 hard cheese knife from Güde Solingen specially developed for the precise portioning of hard cheeses such as Parmesan, Pecorino, or mature Gouda, and impresses with its robust, straight blade and characteristic handle made of natural olive wood. Manufactured by experienced cutlers in up to 55 manual steps, this professional tool offers the perfect balance between stability and precision for clean, even cuts through even the hardest cheeses. The ergonomic olive wood handle fits securely in the hand and allows for fatigue-free work, while the high-quality steel blade retains its sharpness for a long time. With its elegant appearance and proven Güde, this hard cheese knife is the ideal choice for ambitious amateur chefs as well as for professional use in restaurants and delicatessens. A masterpiece of German knife craftsmanship that takes your cheese preparation to a new level.
Pro Tip:
Place the knife at an angle to the piece of cheese and guide it through the hard cheese with even pressure—this will prevent cracks and ensure clean, even slices. For particularly hard varieties such as Parmesan, move the blade in a slight rocking motion instead of just pressing down.
The Alpha hard cheese knife is your ideal companion when you want to cut Parmesan, Pecorino, or aged Gouda into perfect portions. With its sturdy blade, you can effortlessly cut precise pieces from a hard cheese wheel without the knife slipping or the cheese crumbling. The knife is also ideal for breaking off rustic pieces of mountain cheese from the cheese platter, which look particularly appetizing thanks to their natural shape.
You can also use the hard cheese knife creatively to cut nougat, firm marzipan, or frozen caramel for dessert decorations. The non-slip olive wood surface gives you a secure grip even during longer cutting tasks, such as when preparing large quantities of Parmesan for a buffet. When arranging antipasti platters, you can easily break off decorative Parmesan shavings, which you can then sprinkle over carpaccio or salads.
The knife is also ideal for cutting hard chocolate blocks or portioning frozen butter pieces for baking. You will quickly appreciate the versatility of this robust kitchen tool, especially if you like to work with high-quality, mature cheeses.
