About the knife series
The Alpha series from Güde combines traditional blacksmithing with natural elegance: each knife is forged from high-quality CMV steel in up to 55 manual steps, ice-hardened, and sharpened by hand. The handle scales, made from 100 to 500-year-old olive wood, make each knife unique and impress with their striking grain, exceptional hardness, and weather resistance. The classic forged double bolster and ergonomic handle design guarantee optimal balance and fatigue-free working. The range includes various kitchen knives – from chef's knives to the legendary bread knife with a 32 cm blade and pointed serrated edge to the practical Santoku knife. Care instructions: Hand wash only, do not put in the dishwasher.

Güde a family-owned company based in Solingen that has been carrying on its tradition since 1910 and makes the history of blades tangible in every step of the manufacturing process. In up to 55 manual steps, modern control and Solingen blacksmithing are combined in the workshop: stainless, high-alloy blade steel is forged, hardened, ground, and finely polished, while handles made of hardwood or composite materials are shaped, ground, and precisely fitted.
When cutting, you notice the balance, the warm feel of the handle, and the precise feedback from the blade—an experience that combines technical innovations and traditional craftsmanship.
The Güde Alpha hunting knife combines over 100 years of knife-making tradition from Solingen functional design for discerning hunters and outdoor enthusiasts. With its compact blade and elegant olive wood handle, it fits perfectly in the hand and enables precise cuts when butchering game or performing delicate work in nature. Each knife is created in up to 55 manual steps and is manufactured with the utmost care by experienced Solingen knife makers – for exceptional sharpness and long-lasting quality. The warm olive wood handle not only ensures a secure grip even in wet conditions, but also gives the hunting knife an unmistakable elegance. A reliable companion that meets even the highest demands with its perfect craftsmanship and robust workmanship.
Pro Tip:
When nicking, hold the knife close to the base of the blade and work with short, controlled movements – this will give you maximum precision even when performing delicate tasks such as removing tendons. The compact design allows you to make clean cuts without losing power, even in confined spaces.
The Jagdnicker is your reliable companion for game processing and really comes into its own when it comes to precisely breaking open and cutting up game directly in the hunting ground. With its compact, handy shape, this knife allows you to make precise cuts when ringing, gutting, and skinning, with the short blade guaranteeing maximum control. The Jagdnicker is ideal for fine detail work, such as removing bullets or cleanly removing rinds and tendons.
This knife also demonstrates its versatility when preparing smaller game such as hares, pheasants, or ducks, allowing you to make precise, clean cuts. The distinctive olive wood handle sits securely in your hand, even when you are working with gloves or in challenging terrain.
You can also use the Jagdnicker creatively in the kitchen, where it is ideal for deboning poultry, trimming meat, or finely chopping herbs and mushrooms. When camping or on outdoor tours, it is a practical universal tool for carving, food preparation, or smaller craft tasks. Its compact size makes it the ideal companion, which you can carry comfortably on your belt without it getting in the way or taking up too much space.
