About the knife series
The Alpha series from Güde combines traditional blacksmithing with the natural beauty of centuries-old olive wood. Each knife is forged from a single piece of stainless CMV steel and crafted in up to 55 manual steps – ice-hardened, hand-sharpened and with a hardness of 57-58 HRC for excellent cutting performance. The handle scales, made from 100 to 500-year-old olive wood, are heavily grained, extremely hard, and make each knife unique, while the classic double bolster ensures perfect balance. The range includes chef's, bread, paring, and peeling knives, as well as santoku knives, including the legendary bread knife with a 32 cm blade and traditional serrated edge. Care instructions: Hand wash only – do not put in the dishwasher to protect the fine olive wood.

Franz Güde preserves a vibrant tradition of craftsmanship that dates back to 1910: here, tradition means that up to 55 manual steps are involved in Solingen , hardening, and finishing the products in Solingen .
Carefully selected knife steel and hand-picked handle materials are processed with a clear workshop philosophy, where every cut sharpens the function and nothing superfluous remains. You can feel this when cutting—a cool blade, a silky-smooth cut, well-balanced weight, and a feel that combines precision with personal confidence; Solingen blacksmithing meets modern requirements here.
The Güde Alpha cheese knife with perforated blade handles both creamy soft cheese and firm hard cheese with exceptional precision—the clever perforations prevent annoying sticking and enable effortless, clean cuts. Manufactured in up to 55 manual steps, this exclusive Solingen combines the highest level of craftsmanship with an elegant olive wood handle that not only looks great but also offers optimal grip when preparing cheese. The specially developed blade geometry with its sophisticated perforation makes every cheese platter a delightful experience – from delicate Brie to spicy Parmesan, you can cut every variety evenly and attractively. With this professional cheese knife from the Alpha series, you can bring a piece of German knife tradition into your kitchen, proving its exceptional quality with every use. An indispensable tool for discerning cheese lovers who value perfect results and long-lasting quality.
Pro tip:
For particularly hard cheeses such as Parmesan, hold the knife at a slight angle and use short, controlled movements—this will allow even the hardest cheeses to be cut cleanly without crumbling. The perforated holes prevent softer layers of cheese from sticking to the knife.
The Olive cheese knife from the Alpha series is your perfect companion for stylish cheese presentation and makes portioning any type of cheese an effortless pleasure. Thanks to its perforated blade, the knife glides effortlessly through soft and hard cheeses without the cheese sticking to the blade – ideal for creamy Camembert, spicy Roquefort, or even firm Gruyère.
With this knife, you can prepare your cheese platter professionally and cut delicate slices that are perfect for serving. The knife is also ideal for portioning creamy goat cheese or mozzarella, as the perforation prevents soft cheeses from being crushed or torn.
With a little creativity, you can also use the cheese knife to neatly portion soft desserts such as cheesecake or tiramisu without the mixture sticking to the blade. This knife is even excellent for cutting very ripe fruits such as figs or peaches that you want to serve with your cheese platter. With its characteristic olive wood look, the knife is an eye-catcher on any cheese board and combines functionality with Mediterranean flair for your moments of enjoyment.
