About the knife series

The knives in the Güde di Venezia series feature handle scales made from the oak wood of Venetian briccole – posts that serve as mooring posts and channel markers in the Venice lagoon, among other things.

After about 10 to 20 years in salt water, they are replaced because the shipworm (Teredo navalis) – a type of boring mussel – burrows through the wood, leaving behind characteristic boreholes.

These distinctive drill holes, together with the grayish patina caused by long periods of anaerobic conditions underwater and mineral deposits from the salt water, give the wood its extraordinary character—making each handle unique.

The handles are carefully dried, selected, and triple-riveted, creating a limited special edition that combines Venetian lagoon history with traditional Solingen knife-making craftsmanship.

About the History
Solingen knives, Güde , Solingen chef's knives, knife sets, sharpening steels, Solingen knives

Experience craftsmanship perfection from Solingen: The Güde V805/21Güde from the limited edition Briccole di Venezia series combines German knife-making artistry with Italian lagoon romance. Hand-forged in over 55 manual steps, the result is a blade made of high-quality chrome-molybdenum-vanadium steel that impresses with its exceptional sharpness, durability, and rust resistance—a true all-rounder for demanding kitchen tasks, from quick cutting to precise chopping.

The filigree design is based on traditional craftsmanship, but the precision of the workmanship sets new standards in modern knife technology. Particularly exclusive: the handle is made of Venetian briccole oak, which has been standing in the salt water of the lagoon for decades – marked by the boreholes of the shipworm Teredo navalis and the natural patina of the sea water, which not only give the knife a unique appearance but also an extraordinary feel. Each piece tells its own story and brings a touch of lagoon flair to your kitchen.

Whether for vegetables, meat, or herbs, the V805/21 excels in every application thanks to its perfect balance, comfortable weight, and ergonomic handling. Its elegant appearance and distinctive material make it an eye-catcher on the cutting board and a coveted collector's item for connoisseurs. As a limited special edition, each knife is unique, combining Solingen craftsmanship and Mediterranean elegance in a unique way.

Be inspired by the charm of this exclusive collection and enjoy every cut with a knife that is not just a tool, but a true cultural asset – made for those who appreciate the highest quality and individuality.

Pro tip:

Use the wide blade of Güde di Venezia chef's knife to conveniently pick up chopped vegetables or herbs from the cutting board and place them directly into the pot—this allows you to work efficiently and cleanly.

Always guide the knife with a slight rocking motion and place the fingers of your free hand securely as a guide; this will ensure consistent and precise results when cutting and chopping.

The chef's knife is the most versatile knife in the modern kitchen and is ideal for cutting, chopping, and mincing a wide variety of ingredients. With a chef's knife, you can effortlessly cut vegetables, herbs, or fruit into even pieces, portion meat, or fillet fish. The knife's balanced design and ergonomic handling really come into their own when it comes to precision cutting, such as finely chopping onions or mincing herbs.

Creative uses include cutting larger ingredients such as pumpkin or finely slicing sushi ingredients. Even crushing garlic cloves or chopping chocolate for desserts is easy and safe thanks to the sturdy, slightly curved blade.

In short: the chef's knife can be used in a wide variety of areas – from quick cutting and precise dicing to the creative preparation of extraordinary dishes. This makes it an indispensable all-rounder for discerning amateur and professional chefs.
