A special highlight are the handle scales made from 100 to 500-year-old olive wood – each grain is unique, making every knife one of a kind. Güde, a family business from Solingen since 1910), continues the regional tradition of blacksmithing: in up to 55 manual steps, traditional shaping, annealing, and fine finishing are combined to create the unmistakable Solingen blacksmithing art.
The blades are hardened, tempered, ground by hand and mounted on handles made of wood or modern composite materials — when cutting, you can feel the precise balance, the warm feel and the immediate sharpness; traditional techniques are combined with modern heat treatments and testing procedures to meet today's requirements.
The Shark Olive herb knife from the Alpha series by Güde Solingen herb preparation into pure perfection—the characteristic serrated edge gently cuts even the most delicate herbs without crushing or mashing them. Handcrafted in up to 55 manual steps, this extraordinary knife combines traditional Solingen blacksmithing with modern design and maximum functionality. The ergonomic handle made of natural olive wood fits securely in the hand and enables precise cutting of parsley, basil, chives, and other herbs. Thanks to the special blade geometry, essential oils and aromas are optimally preserved, while the robust workmanship guarantees years of reliability in the kitchen. An indispensable tool for anyone who values authentic craftsmanship and perfect kitchen results.
Pro tip:
Cut soft herbs such as basil or parsley with gentle sawing movements without applying pressure—this prevents the leaves from being crushed and preserves the valuable essential oils. The non-slip olive wood handle gives you the control you need for even, fine cuts.
The Shark Olive herb knife with its characteristic serrated edge is your ideal companion for all tasks involving fresh herbs. It allows you to cut basil, parsley, chives, and cilantro particularly gently and precisely without crushing or tearing the delicate leaves. The serrated blade glides effortlessly through soft herb stems and wafer-thin leaves, while the cut herbs retain their essential oils and full aroma.
Use the knife in the traditional way to chop herbs on a cutting board or to cut directly over salads and soups. The Shark Olive also excels at finely chopping garlic and mincing ginger. The serrated edge also proves its worth when cutting soft tomatoes, ripe peaches, or mozzarella, where smooth blades often slip.
With a little creativity, you can also use this knife to portion pizza or focaccia directly at the table, cut delicate dumplings, or create decorative garnishes for your dishes. The non-slip olive wood handle fits securely in your hand, allowing you to cut precisely and without fatigue, even during longer preparations.
