About the knife series
The Alpha series from Güde combines traditional blacksmithing with natural elegance: each knife is made from stainless CMV steel in up to 55 manual steps, ice-hardened, and sharpened by hand, with a hardness of 57–58 HRC for long-lasting sharpness. The handles, made from 100 to 500-year-old olive wood, are heavily grained, particularly hard and weather-resistant – making each knife truly unique. The classic forged double bolster and ergonomic handle design with triple riveting ensure perfect balance and fatigue-free working. Please note: These high-quality knives should only be cleaned by hand to protect the precious olive wood.

Since 1910, knives have been made in the heart of Solingen that do what they are supposed to do: cut. Franz Güde combines the precise art of forging from the city of blades with a clear philosophy of craftsmanship—each type of steel is used where its properties are best utilized.
When the blade glides through vegetables, you can feel the balance between the handle and the cutting edge, which can only be achieved through decades of experience. This is where traditional Solingen blacksmithing expertise meets modern ergonomics – for knives that feel just as natural in your hand after a hundred cuts as they did the first time.
The Güde Alpha paring knife combines traditional Solingen craftsmanship with Mediterranean design and is precision-crafted in up to 55 manual steps. With its handy size and sharp blade, it masters delicate cutting tasks such as peeling fruit and vegetables, cleaning small foods, or precise garnishing with effortless elegance. The warm olive wood handle fits comfortably in the hand and adds a natural, Mediterranean touch to any kitchen. The high-quality workmanship in the Solingen tradition guarantees long-lasting sharpness and makes this paring knife an indispensable companion for anyone who values precision and stylish design. Experience the perfect symbiosis of functional excellence and timeless aesthetics – a knife that meets the highest standards of quality and handling.
Pro Tip:
When peeling fruit and vegetables, hold the paring knife at an angle to your hand to maintain maximum control and achieve even, thin peels. The compact blade length is particularly well suited to circular movements when peeling apples or potatoes.
The Olive paring knife from the Alpha series is your ideal companion for all delicate cutting tasks in the kitchen. With its short, precise blade, you can effortlessly peel fruits and vegetables such as apples, pears, potatoes, or carrots. Its handy size makes it perfect for tasks that are performed directly in the hand, such as removing peel strips or cleaning mushrooms and radishes.
In addition, this knife is ideal for coring peppers, precisely cutting garlic cloves, or removing stems from strawberries and tomatoes. You can also get creative with it: carve decorative patterns into cucumber skins, create lemon and orange zest for cocktails, or shape radishes into artistic garnishes. The paring knife fits securely in your hand and allows you to make controlled, precise cuts even with delicate foods such as fresh herbs or soft fruits.
This compact tool is also ideal for preparing antipasti, cutting mozzarella, or filleting small fish. Item number X703/06 gives you a versatile kitchen knife in a Mediterranean olive wood design that combines functionality with an attractive appearance.
