About the knife series
The knives in the Güde di Venezia series feature handle scales made from the oak wood of Venetian briccole – posts that serve as mooring posts and channel markers in the Venice lagoon, among other things. After about 10 to 20 years in salt water, they are replaced because the shipworm (Teredo navalis) – a type of boring mussel – burrows through the wood, leaving behind characteristic boreholes. These distinctive drill holes, together with the grayish patina caused by long periods of anaerobic conditions underwater and mineral deposits from the salt water, give the wood its extraordinary character—making each handle unique. The handles are carefully dried, selected, and triple-riveted, creating a limited special edition that combines Venetian lagoon history with traditional Solingen knife-making craftsmanship.

Ham knife Briccole

Briccole di Venezia knives from Güde handles made from original Venetian briccole wood, which stood for decades as posts in the Venetian lagoon. The oak posts, known as briccole, are replaced after about 10 to 20 years in salt water and their grain makes them a distinctive material for handles. The handles are carefully crafted and triple-riveted to ensure stability and durability. This limited edition brings the history and flair of Venice into the kitchen, combined with traditional Solingen craftsmanship. The result is an exclusive knife series with exceptional aesthetics and high functionality.
The Güde from the Briccole di Venezia series, such as the V764/10 model, embodies the perfect symbiosis of traditional craftsmanship and modern design. It is manufactured in up to 55 careful manual steps to ensure the highest quality and precision. The blade is made of high-quality chrome-molybdenum-vanadium steel, which is known for its exceptional sharpness and durability. The compact 10 cm long blade is ideal for trimming and garnishing, with precision and sharpness ensuring efficient work. The handle is made of Venetian briccole oak wood – which has stood in the salt water of the lagoon for decades, is riddled with the burrows of the shipworm Teredo navalis, and has been refined by the natural patina of the sea water – offering not only a unique look but also ergonomic handling. With this knife, you will experience the combination of exclusivity and functionality. It is a true masterpiece from Solingen that will enrich your everyday cooking and make a special gift.
Güde are characterized by their clean lines and precision craftsmanship. Each piece is unique and reflects the high level of craftsmanship of the Solingen knife makers. Whether for kitchen work or as a gift for gourmets, this paring knife is a real eye-catcher and a valuable tool that allows you to trim, cut, and garnish with style and efficiency.
Pro Tip:
For precise cleaning and cutting of small ingredients such as garlic or herbs, place the Güde with its short, hand-sharpened blade as close as possible to the cutting point – this will give you particularly clean cuts and allow you to maintain full control over what you are cutting at all times.
Extra tip: Thanks to the ergonomic shape of the handle made of Venetian briccole wood, the knife lies securely in your hand even when performing delicate cutting tasks – take your time and guide the knife calmly to achieve even results.
The paring knife is a versatile tool designed specifically for delicate and precise work in the kitchen.
With its compact, tapered blade, it is particularly suitable for larding meat, using the tip to flavor lean meat with bacon, spices, or herbs. It is also ideal for cleaning, peeling, and coring fruit and vegetables. The fine cutting edge allows for effortless cutting of ingredients such as onions, garlic, or herbs.
The knife can also be used for decorative carving, such as garnishing or shaping edible decorations from fruit and vegetables. Even filleting small fish is precise and efficient with the sharp, narrow blade.
There are virtually no limits to the creative possibilities: whether for dicing cheese for salads, portioning cold cuts, or even for small tasks at a picnic or in the office, a paring knife is always a practical choice.
With a model such as the Güde with its exclusive Briccole di Venezia handle, you not only benefit from the highest quality craftsmanship, but also from ergonomic comfort and an exceptional appearance.
The paring knife is therefore a stylish and functional kitchen tool that is an asset to any cook.
