About the knife series
The Balkhauser Kotten series from Güde for handmade exclusivity and combines traditional Solingen knife-making craftsmanship with a very special selection of wood: the handles are made from the original oak wood of the historic water wheel at Balkhauser Kotten, making each knife a truly unique piece with its own individual grain.
The blades are painstakingly handcrafted from a single piece of chrome-vanadium-molybdenum steel, are stainless, ice-hardened, and hand-sharpened for long-lasting sharpness and maximum functionality—each knife undergoes more than 40, and in some cases up to 55, manual steps.
Distinctive details such as the engraved logo at the end of the handle are reminiscent of Solingen's industrial history and make the series a special collector's item.
The balanced interplay of solid steel and historic oak wood creates a knife that impresses both professional and ambitious home cooks with its precision, durability, and individual character.

Pro Tip:
For wafer-thin, even slices, guide the flexible blade of your ham knife through the ham or roast with a gentle pull in long, steady movements—this preserves the structure of the meat and brings out its full flavor. Use the entire length of the blade instead of just cutting with the tip to achieve optimal results and particularly fine slices.
With the Güde BK765/21 Güde from the exclusive Balkhauser Kotten series, you get a versatile cutting tool that brings maximum precision, unique quality, and traditional craftsmanship to your kitchen.
Whether you're cutting wafer-thin slices of Parma or Serrano ham, carving a roast, or precisely portioning roast beef, the 21 cm long, flexible blade of this ham knife glides through all fine fiber structures with almost no resistance, bringing out the full flavor of your delicacies. Thanks to the hand-forged blade guide made of chrome-vanadium-molybdenum steel, you can work effortlessly even with tough meats and achieve a clean, even cut.
Used creatively, the knife is also ideal for the delicate cutting of carpaccio or the fine portioning of sushi rolls and sashimi. Vegan and vegetarian gourmets also benefit: with the Güde , ripe tomatoes, peppers, or even firm fruits such as honeydew melon and mango can be cut accurately and elegantly.
