About the knife series
The knives in the Güde di Venezia series feature handle scales made from the oak wood of Venetian briccole – posts that serve as mooring posts and channel markers in the Venice lagoon, among other things. After about 10 to 20 years in salt water, they are replaced because the shipworm (Teredo navalis) – a type of boring mussel – burrows through the wood, leaving behind characteristic boreholes. These distinctive drill holes, together with the grayish patina caused by long periods of anaerobic conditions underwater and mineral deposits from the salt water, give the wood its extraordinary character—making each handle unique. The handles are carefully dried, selected, and triple-riveted, creating a limited special edition that combines Venetian lagoon history with traditional Solingen knife-making craftsmanship.

Each knife is crafted in up to 55 manual steps – the result is extraordinary precision and durability that you can feel with every cut.
The hand-forged blade made of high-quality chrome-molybdenum-vanadium steel stays sharp and, thanks to its 21 cm length, glides effortlessly through even the finest slices of ham.
The ergonomic handle made of original Venetian briccole wood is truly unique, crafted from oak posts that stood in the Venice lagoon for decades—riddled with the burrows of the shipworm Teredo navalis and marked by the natural patina of salt water—making each knife distinctive.
With its slim, perfectly balanced design, this knife is ideal not only for ham, but also for roasts, meat, vegetables, or fruit.
An all-round solution for anyone who values the highest quality, distinctive appearance, and traditional craftsmanship in kitchen tools.
This ham knife is not just a kitchen utensil, but an exclusive piece of craftsmanship – ideal for gourmets who celebrate enjoyment and seek something special.
Pro tip:
For wafer-thin, even slices, guide the Güde through the ham with long, steady strokes without applying pressure—this allows you to make optimal use of the full length of the blade and achieve a particularly clean cut.
Be sure to clean the knife regularly by hand and lightly oil the unique wooden handle from time to time so that you can enjoy its exclusive appearance and functionality for a long time to come.
A ham knife is an indispensable tool when it comes to cutting ham thinly and precisely. Thanks to its long, narrow, and sharply ground blade, you can glide effortlessly through air-dried, smoked, or cooked ham and serve particularly fine, even slices.
But its uses go far beyond the classic cutting of ham: you can also use the ham knife to portion roasts, beef fillets, and poultry with particular accuracy. The slim, medium-pointed shape is also ideal for carving at the table, cutting salmon, fine raw ham (e.g. Parma ham), and for cutting and portioning large fruits or vegetables such as melon or celery.
Creative use: Use your ham knife to make fine slices of carpaccio, to cleanly cut roulades, or to precisely dice larger pieces of meat. The knife also shows its strengths when it comes to special delicacies such as air-dried wild salami or cutting firm fruit bread and pâtés.
For those who appreciate the highest precision and an appealing presentation, the ham knife is the best choice. It supports you in demanding cutting tasks and helps to celebrate the enjoyment of high-quality ingredients.
