About the knife series
The Alpha series from Güde combines traditional blacksmithing with natural elegance: each knife is forged from stainless CMV steel in up to 55 manual steps, ice-hardened, and sharpened by hand—for first-class cutting performance at 57–58 HRC. The handle scales, made from 100 to 500-year-old olive wood, make each knife a unique piece with character and a warm, strongly grained appearance. The classic forged double bolster and ergonomic handle shape ensure perfect balance and fatigue-free working. Important: Clean these high-quality knives by hand only – never put them in the dishwasher to protect the precious olive wood.

Güde a family business from Solingen, founded in 1910. The tradition is evident in every detail: the knives are Solingen in Solingen in up to 55 manual steps.
Solingen's blacksmithing art refines hand-selected steels through forging, targeted heat treatment, fine grinding, and hand-assembled handles made of wood or composite materials—when handling them, you can feel the balance, warm feel, and precise cutting, while modern grinding and measuring technology reliably complements old techniques.
The Olive sharpening steel from the Alpha series combines traditional Solingen craftsmanship with modern design and is precision-manufactured in up to 55 manual steps. The ergonomically shaped olive wood handle fits perfectly in your hand and offers optimal grip for professional honing and sharpening of your blades. The high-quality steel rod allows you to maintain the sharpness of your knives permanently and significantly extend their service life. With this sharpening steel, you are investing in an indispensable tool for every discerning hobby chef and professional who values permanently sharp cutting tools. Güde from Solingen – made to last for generations and a guarantee for professional knife care in your kitchen.
Pro tip:
Draw the blade across the sharpening steel at a 20-degree angle from the base to the tip, alternating sides evenly. The ergonomic olive wood handle gives you optimal grip, allowing you to sharpen safely and precisely even with frequent use.
The Olive sharpening steel from the Alpha series is your indispensable helper for keeping your kitchen knives ready to cut at all times. With this sharpening steel, you can sharpen the edge of your knives after each use and restore the fine burrs so that the blade retains its original sharpness. The olive wood handle fits perfectly in your hand and gives you a secure grip for precise sharpening.
Use the sharpening steel before you start cutting—especially for demanding tasks such as filleting fish or carving meat, the freshly sharpened blade makes an immediate difference. Even after cutting harder foods such as pumpkin or cabbage, it is advisable to quickly run the knife over the sharpening steel. This will significantly extend the intervals between more time-consuming sharpening processes with a whetstone.
You can also use the sharpening steel creatively to make the blade razor-sharp again before cutting delicate herbs or tomatoes – this will prevent bruised cut surfaces. With regular use, you can keep your entire knife collection in top condition and always work efficiently and safely in the kitchen.
