About the knife series
The Alpha Olive series from Güde combines traditional forging skills with natural elegance: each knife is forged from a single piece of stainless CMV steel in up to 55 manual steps, ice-hardened and sharpened by hand - for a hardness of 57-58 HRC and outstanding edge retention. The handle scales are made from 100 to 500 year old olive wood, whose intensive grain makes each knife unique, and are triple riveted with the characteristic Güde as a decorative element. The classic forged double bolster ensures optimum balance and fatigue-free working. The range includes chef's, bread, larding and paring knives as well as the legendary Güde bread knife with a 32 cm blade and traditional serrated edge - a design that has endured since the 1930s.

As a family business since 1910, Franz Güde GmbH in Solingen cultivates the traditional Solingen art of forging and produces blades in up to 55 manual work steps in which form and function merge. The blades are precisely hardened from selected steel alloys, ground in several stages and finished by hand; traditional forging techniques complement modern heat treatment and mechanical precision.
When cutting, you can immediately feel the balance, the warm feel of the handle and the fine, reliable precision - a tool that turns routine cooking into a direct, sensual experience.
With its flexible blade, the Olive fillet knife from the Alpha Olive series by Güde Solingen masters delicate cuts through fish and meat with exceptional precision. Manufactured in up to 55 manual steps, this high-quality kitchen knife combines German craftsmanship with the warm character of the fine olive wood handle, which makes each knife unique. The narrow, flexible blade effortlessly follows the contours of fish bones and allows you to cut even the thinnest fillets without losing any meat. With its ergonomic shape and excellent balance, the fillet knife sits perfectly in the hand and makes every kitchen task an experience of the highest quality. Experience the difference of genuine Solingen knife art and invest in a tool that will last for generations.
Pro tip:
Always guide the flexible fillet knife close to the ridge and allow the blade to follow the contour of the bone - this will give you maximum meat yield without waste. For thin fish fillets, work with gentle pressure and flowing movements so that the tender meat does not fall apart.
The Olive fillet knife from the Alpha Olive series is your ideal companion when it comes to precise and clean cuts in fish and meat. With its flexible blade, you can glide effortlessly along the bones and perfectly separate salmon fillets, trout or sea bass from the skeleton without wasting valuable meat. The knife also shows its strengths when skinning fish fillets, as the flexibility allows you to work directly on the skin.
But the fillet knife can do much more than just process fish: You can use it to cut wafer-thin slices of raw beef for carpaccio or remove tender poultry meat from the bones. When preparing sushi and sashimi, the fine blade allows you to make precise, smooth cuts that do not bruise the fish protein. This knife is also ideal for paring meat, i.e. removing tendons and silver skin.
You can also use the fillet knife creatively when cutting very ripe tomatoes or soft fruit where precision is required. The ergonomic olive wood handle ensures a secure grip, even if your hands become slippery due to moisture. With this knife, you can get the most out of every piece of fish and meat and work both economically and professionally.
