About the knife series
The Alpha series from Güde combines traditional blacksmithing with the natural beauty of centuries-old olive wood. Each knife is forged from a single piece of stainless CMV steel and crafted in up to 55 manual steps – ice-hardened, hand-sharpened and with a hardness of 57-58 HRC for excellent cutting performance. The handle scales, made from 100 to 500-year-old olive wood, are heavily grained, extremely hard, and make each knife unique, while the classic double bolster ensures perfect balance. The range includes chef's, bread, paring, and peeling knives, as well as santoku knives, including the legendary bread knife with a 32 cm blade and traditional serrated edge. Care instructions: Hand wash only – do not put in the dishwasher to protect the fine olive wood.
