Up to 55 manual steps are required to produce a hand-forged blade made of high-quality chrome-vanadium-molybdenum steel, which impresses with its exceptional sharpness and durability. Thanks to its narrow, 21 cm long blade, the knife glides effortlessly and precisely through tender meat, ham, or roast, ensuring wafer-thin, perfect slices—even with delicate foods. Traditional craftsmanship is combined with modern design and excellent balance thanks to the ergonomic handle made of velvety-fine pear wood, which fits comfortably in the hand and gives each knife an individual, elegant character. Pro Tip:
Pull the ham knife through the food in long, even strokes without applying pressure—the narrow blade does the work by itself, ensuring wafer-thin, even slices without tearing. Sharpen the blade regularly with a sharpening steel (angle 15-20 degrees) to ensure that the knife cuts as precisely as it did on the first day, even after years of use.
Discover the Güde Birne Güde , a masterpiece of Solingen blacksmithing that combines traditional precision with modern elegance—for anyone who values exact results and an exceptional cutting experience.
The Birne ham knife really comes into its own when carving ham, roast meat, or tender roast beef: Thanks to the narrow, 21 cm long blade, you can cut wafer-thin, even slices almost effortlessly without tearing the delicate meat. Especially with air-dried ham or high-quality salmon, you benefit from the excellent sharpness and flexibility of the hand-forged blade – thus optimally preserving taste and texture.
In addition to its traditional use, the ham knife is also a creative all-rounder in the kitchen: use it, for example, to precisely cut larger fruits such as melons, pineapples, or papayas into fine strips or to conjure up wafer-thin carpaccio slices of beetroot, zucchini, or other vegetables. Even delicate fish such as salmon fillet can be portioned into perfect sashimi slices without any effort.
The ergonomic handle made of velvety-fine pear wood is particularly comfortable and non-slip in the hand, which makes working with it for long periods of time much easier. Professional balance and traditional design make carving and filleting a moment of pleasure in which quality and aesthetics can be felt.
With the pear ham knife, you are adding a tool to your kitchen that can be used in many ways, both for festive occasions and in creative everyday life – for everyone who appreciates knife craftsmanship at the highest level.
