About the knife series
The Güde Alpha knife series combines traditional blacksmithing with elegant handles made from wine barrels that are over 100 years old, whose oak wood has become virtually indestructible through long maturation. In over 40 manual steps, the blades are forged from a single piece of chrome-vanadium-molybdenum steel, ice-hardened, and sharpened by hand, with a hardness of 57-58 HRC ensuring optimum sharpness and cutting durability. The characteristic double bolster of Alpha and the full tang guarantee perfect balance and fatigue-free working, while the triple-riveted handle scales with the centrally placed palm rivet Güde the unmistakable Güde trademark. With a bevel angle of approx. 33 degrees, these knives offer maximum precision for discerning cooking enthusiasts and wine lovers.

If you value an authentic Solingen original that combines function, style, and sustainable materials, this bread knife is a reliable companion with a unique character that makes cutting bread and roasts a delightful experience.
The true versatility of this knife is evident in practice: Start your day with perfectly cut slices of bread for breakfast, where the serrated edge cuts cleanly through even crispy crusts without crushing the soft interior. The longer 32 cm model is ideal for large loaves and tin loaves, which you can portion into presentable slices with long, even strokes. The knife really comes into its own with rustic farmhouse breads or wholemeal loaves – the sawing motion allows you to work effortlessly without exerting any force.
But its uses go far beyond classic bread cutting: you can also use the Fasseiche bread knife to carve roasts, where the long blade allows you to cut even, appetizing slices of meat. The sharpness and stability of the hand-forged blade is also evident when cutting melons, pumpkins, or pineapples. Creative users also appreciate the knife when cutting cakes and pies, especially multi-layered baked goods that require a clean cut without crumbling. Even with frozen foods, the robust blade steel performs well without losing its sharpness.
For fine dining, the knife is recommended for portioning terrines or pâtés, where precise cuts perfect the presentation. The combination of balanced weight and the characteristic oak handle ensures comfortable handling even during longer cutting tasks. With this knife, you are investing in a durable tool that will accompany you every day and impress you with its beauty and functionality in equal measure.
