About the Knife Series
The Güde Alpha series combines traditional blacksmithing with unique design: the handle scales are made from oak wood sourced from wine barrels that are over 100 years old, which has become particularly robust and durable due to its long maturation. The blades are made of forged chrome-vanadium-molybdenum steel, ice-hardened and hand-sharpened, with each knife being created in over 40 manual steps. With a hardness of 57-58 HRC, the knives offer excellent cutting performance and can be easily resharpened if necessary. The characteristic double bolster of Alpha ensures optimal weight distribution and perfect balance, while the three finely polished rivets – with the aluminum palm rivet in the center as Güde trademark Güde connect the handle scales to the steel blade.

This exceptional steak knife truly shines when carving hearty bone-in Porterhouse steaks, which require a sturdy knife due to their size and thickness. The slightly curved blade glides precisely through tender beef tenderloin and severs the meat fibers with a single cut, ensuring that the precious meat juices remain inside. With this knife, you can perfectly navigate between the tenderloin and sirloin sections of a Porterhouse steak and cleanly separate both parts from the T-bone without wasting any valuable meat.
The Porterhouse steak knife has proven itself a classic choice for medium-rare steaks, bone-in lamb chops, or thick beef rump steaks, which aren’t crushed by the precise blade. The blade allows for exceptionally gentle cutting that preserves the meat’s texture and ensures a first-class taste experience. The knife also demonstrates its quality when used on pan-seared duck breasts or juicy veal tenderloin, producing perfectly cut slices with intact meat fibers.
Used creatively, the Porterhouse steak knife is ideal for delicately carving roast beef or precisely portioning roasted rack of lamb right at the table. You can also use it to cut thicker slices of smoked ham or air-dried bresaola without damaging their delicate texture. Even when cutting grilled vegetables with a firm texture, such as whole eggplants or large Portobello mushrooms, the sharp blade demonstrates its versatility. For special occasions, the knife is ideal for stylishly serving Chateaubriand or carving a whole dry-aged steak in front of your guests, with the elegant oak handle serving as a true eye-catcher.
