Milly is available in two handle variations, both featuring the same hand-forged blade. The handle scales of the POM version, made of black plastic, are riveted in multiple places, fit securely in the hand, and are exceptionally durable for everyday kitchen use. Milly Olive, on the other hand, features olive wood handle scales that feel particularly comfortable in the hand and, thanks to their grain, make each knife one-of-a-kind.

Milly

Milly Güde , as the wife of former company owner Franz Güde , is an integral part of the family history of our Solingen-based manufacturer. The series now bears her name, offering new buyers an affordable way to enter the world of high-quality, hand-forged knives. No corners are cut when it comes to the blade: It is produced in the same facility as all “ GÜDE ” knives, hand-forged in Solingen , ice-hardened, and sharpened by hand.

The Milly series features a deliberately minimalist design. The result is a knife with proven blade quality and a slim, sleek shape at a price that appeals even to beginners and home cooks.

Material

GÜDE uses the same stainless chrome-vanadium-molybdenum steel for Milly as it does for its classic series. The knife steel must meet two requirements that are actually contradictory: If it is too soft, the cutting edge will quickly become dull. However, if it is too hard, the blade will become brittle and may break.

At GÜDE , we have been working with the same steel for decades and have adjusted its hardness so that the blade retains its sharpness for a long time. This is aided by a process known as ice hardening, in which the blade is rapidly cooled. This improves the steel’s microstructure and increases its edge retention. The blade is then reheated to make it shatter-resistant.

Manufacturing

Every Milly blade is hand-forged in Solingen and undergoes a series of steps before it leaves our workshop. After forging, the blank is first roughly ground and calibrated.

Next comes the ice-hardening process, during which the blade is cooled to about minus 80 degrees before undergoing two stages of tempering. The blade and spine are then rough-ground and fine-ground. Finally, a knife maker sharpens the cutting edge by hand, and the handle scales are riveted in place.

Form

Milly is the slimmest model in the “ GÜDE ” line. The knife has a slim, streamlined design, and the multi-riveted handle scales—made of POM or olive wood—ensure a secure grip.

Function

A good knife must be sharp, stay sharp for a long time, and feel comfortable in the hand. With Milly knives, the ice-hardened steel and hand-polishing ensure the blade’s sharpness, while the multi-riveted handle scales guarantee a secure grip.

To ensure that the blade stays sharp for as long as possible, it’s best to wash your Milly knife by hand. For occasional sharpening, a sharpening steel is sufficient, along with an occasional use of a whetstone. The sharpening service offered by the GÜDE factory will restore the blade to its original condition when needed.

Our Knife Collections

We value individuality—especially when it comes to developing and refining our knife collections. This is reflected in every single blade that leaves our workshop, in the selection of particularly beautiful and tactile handle materials, and in a unique ergonomic design that enables and celebrates fluid, fast, and precise work.

Bread knife

Güde in 1941 by master craftsman Franz Güde , the distinctiveGÜDE on our bread knives continues to delight bakers and bread lovers around the world today. The sharp serration of the unyielding, finely ground chrome-vanadium-molybdenum steel ensures that loaves, baguettes, and rolls are sawed rather than crushed, and that cabbage, melons, and crispy roast meats can be cut with ease. The elegantly simple handles, crafted from various high-quality materials, further contribute to the legend of our knives.
