About the knife series
The Güde Alpha series combines traditional Solingen blacksmithing with elegant design and was launched to mark Güde acceptance Güde a preferred supplier to Jeunes Restaurateurs d'Europe. Each knife is manufactured in over 40 manual steps: the blade is made of chrome-vanadium-molybdenum steel, is hand-forged, stainless, ice-hardened, and hand-sharpened, while the handle scales are made of finely structured pear wood with a velvety feel. The characteristic double bolster ensures a balanced weight distribution and enables fatigue-free working. With a hardness of 57-58 HRC, the knives offer excellent cutting performance and are still easy to resharpen – a perfect combination of function, quality, and timeless design.

Franz Güde has been manufacturing in Solingen since 1910. Solingen using traditional craftsmanship. For four generations, the family-owned manufacturer has been combining German blacksmithing with state-of-the-art precision.
Every Güde is genuinely handmade —from the shaping of the blade to the final polish. The master craftsmen in Solingen rely on high-quality steel alloys and time-consuming processing steps that industrial manufacturing cannot achieve.
The result: knives that last a lifetime and let you feel what true manufacturing quality means with every cut.
The Güde Kulle Alpha is the Japanese utility knife for the highest demands – hand-forged in Solingen high-quality chrome-vanadium-molybdenum steel and specially ice-hardened for maximum sharpness and durability. Up to 55 manual steps are required to create blades that impressively combine tradition and precision and deliver outstanding performance even for the finest cutting tasks. The specially shaped hollow edge minimizes food sticking to the 18 cm long blade, ensuring a particularly clean cut – ideal for meat, fish, cheese, vegetables, and fruit. The smooth, ergonomically balanced pear wood handle feels pleasantly velvety in the hand and underlines the exclusive character of this knife. Thanks to the unique Güde in the Alpha series, you benefit from outstanding control, balance, and aesthetics with every cut. With the Santoku Kulle, you are choosing a masterpiece for ambitious cooks that meets the highest expectations in terms of function and design. This knife is much more than a kitchen tool—it is a statement of quality and craftsmanship that promises a lifetime of cooking pleasure.
Pro Tip:
The Güde Kulle Alpha is best used for rocking cuts of fish, meat, cheese, and vegetables—the special hollow edge ensures that even delicate or sticky foods glide effortlessly and cleanly off the blade without sticking. This allows you to achieve a precise, decorative cut, and cutting becomes a precise, routine pleasure.
The Güde Kulle Alpha is a versatile universal knife that will accompany you on all your culinary adventures – whether everyday cooking or creative fine dining. This hand-forged specialist really comes into its own with classic Asian dishes such as sushi or sashimi, as its sharp, ice-hardened blade and hollow edge allow you to effortlessly cut raw fish such as salmon or tuna into wafer-thin slices without the food sticking to the blade. The 18 cm long blade also ensures a clean, even cut for delicious stir-fry creations, where lots of vegetables need to be cut vigorously but precisely. Cutting herbs, fine leeks, or tender beef is just as easy, as the ergonomic pear wood handle provides optimal grip and guides the hand without fatigue.
But the Santoku is not only an asset in classic cuisine: you can also use it creatively—for example, for precise portioning of soft cheese, as the hollow edge prevents sticking and thus enables perfect pieces. Those who enjoy decorating cakes with fruit or serving unusual carpaccio variations of vegetables and fruit will benefit from the exceptional sharpness and precision of this knife for delicate work. Even unusual tasks, such as cutting dried mango into wafer-thin slices or finely chopping chocolate for pâtisserie ideas, are mastered with ease by this knife.
With the Güde Kulle Alpha , you are choosing a tool that uncompromisingly meets classic demands while opening up creative freedom for innovative recipes. You will feel the control, balance, and incomparable cutting sensation with every step – a knife that will enrich your kitchen for years to come.
