The knives are made from a single piece of forged chrome-vanadium-molybdenum steel, ice-hardened, and sharpened by hand; a total of over 40 manual steps are required for each knife.
Typical features include the classic three-rivet design and Güde double bolster, which ensures perfect balance and excellent cutting properties.
Each knife in the Alpha series combines high-quality materials, traditional craftsmanship, and striking details such as the palm tree decorative rivet and the individual grain of the barrel wood.

Individual grain patterns and colors make each knife truly unique, with its own history. The design combines centuries-old Solingen blacksmithing with modern aesthetics and perfect ergonomics for fatigue-free, safe working. This filleting knife from the Alpha series is aimed at ambitious amateur chefs and connoisseurs who do not want to compromise when preparing fish and meat. Whether in your kitchen at home or at the barbecue, with this knife you are choosing an exclusive tool that uniquely combines function, tradition, and exceptional character.
Pro Tip:
Take advantage of the flexible 18 cm blade of the filleting knife by applying gentle pressure and guiding the blade in a smooth motion close to the bones or tendons when filleting – this allows you to remove fish and meat fillets with particular precision and virtually no waste. For best results, always work on a wooden or plastic board and clean the knife by hand immediately after use.

This filleting knife from the Alpha series is aimed at ambitious amateur chefs and connoisseurs who do not want to compromise when preparing fish and meat. Whether in the kitchen at home or at the barbecue: with this knife, you are choosing an exclusive tool that uniquely combines function, tradition, and exceptional character.
In classic use, the filleting knife shows its full strength when filleting fish. The flexible blade nestles perfectly against the natural contours of the fish's body and glides effortlessly along the fish skin, allowing you to achieve maximum yield with minimal waste. Whether you are preparing fresh salmon, trout, or walleye, the knife allows you to make precise, long cuts that preserve the delicate flesh and produce perfectly portioned fillets. The flexibility of the blade is particularly impressive when skinning fish fillets: you can work with minimal effort and still achieve clean results that are appreciated in professional kitchens.
But the Güde Alpha Güde is not just for fish. It also performs excellently when preparing meat. Use it to debone poultry, for example when you want to separate a duck breast from the skin or cut up a whole chicken. The narrow, tapered blade navigates precisely around bones and separates tendons and connective tissue without wasting valuable meat. The knife also proves to be an indispensable aid when trimming beef or pork fillets: you can remove silver skin and layers of fat with surgical precision, creating perfectly prepared pieces of meat for further processing.
Creative chefs will also discover a wide range of uses beyond classic filleting. The knife is ideal for cutting wafer-thin slices of meat for carpaccio or tartare, with its razor-sharp edge ensuring even, aesthetic results. Its versatility is also evident when peeling and filleting citrus fruits for sophisticated desserts or cocktails: the flexible blade removes peel and white pith with ease, leaving you with perfectly segmented fruit without any bitter substances. For ambitious culinary projects, you can also use the filleting knife to carve vegetables and fruit artistically —the precise tip and controlled flexibility allow for intricate decorations that enhance the visual appeal of your dishes.
The hand-forged Alpha fillet knife is much more than a special tool for occasional fish dishes. It is a versatile kitchen companion for anyone who values professional results, the highest quality materials, and exceptional craftsmanship. Invest in a knife that will accompany you for decades and whose unique oak barrel look makes every use a special experience.
