About the knife series
The Alpha Barrel Oak from Güde stands for the highest quality craftsmanship and unique material refinement - each blade is made of stainless chrome-vanadium-molybdenum steel, forged in over 40 manual steps, ice-hardened and sharpened by hand so that it offers a hardness of 57-58 HRC and excellent edge retention.
The handle scales are made from oak wood from old wine barrels, which is extremely stable and hard-wearing due to its long maturing process and is truly unique with its even grain - the wood gives each knife individuality and a very special feel.
The three-rivet design with finely polished brass rivets and the double bolster shape typical of Güde ensure a good balance, perfect handling and fatigue-free working - the middle rivet also bears the palm tree logo as the manufactory's trademark.
The Alpha Barrel Oak series thus combines traditional blacksmithing, exclusive materials and sophisticated design to create a real kitchen highlight for discerning chefs and wine lovers.

Since 1910 Franz Güde has been manufacturing Solingen Franz Güde has been making knives by hand in Solingen since 1910 - a family business that has perfected its skills over four generations.
Every Güde is created by the hands of experienced blacksmiths and grinders who work according to traditional methods and rely uncompromisingly on German quality steels. This combination of Solingen blacksmithing and precision craftsmanship is what gives the brand its special character.
When you hold a Güde in your hand, you can feel the balance and sharpness that only true craftsmanship can produce - a tool that will last a lifetime.
The Güde Alpha E740/18 is an exclusive cleaver from Solingen that impresses with its hand-forged 18 cm blade made of high-quality chrome-vanadium-molybdenum steel. Manufactured in over 40 manual steps, this cleaver represents craftsmanship of the highest standard and guarantees precise cuts and exceptional durability. The extra strong and wide blade is perfect for effortlessly cutting even meat with bones and also proves its worth in tougher tasks in professional kitchens and demanding private use. The ergonomically shaped handle is made of fine oak from wine barrels that are over 100 years old, giving the knife a particularly high-quality feel and making each piece unique with its own character. Thanks to its optimal balance and noticeable weight (approx. 400 g), the cleaver lies securely in the hand and enables efficient work without fatigue. Ice-hardened stainless steel ensures reliable sharpness and durability, while the double-sided blade guarantees precise cutting results. With the Güde E740/18, you are choosing a tool that combines tradition, modern precision, and fine materials – for anyone looking for uncompromising quality and a genuine piece of Solingen blacksmithing.
Pro tip:
Use the extra strong blade of the Güde chopper by positioning the knife with a relaxed but secure hand position and a straight swing onto the food to be chopped - this allows you to make precise cuts through meat and bones without great effort. To crush or crush spices, simply use the flat blade surface to gently and effectively crush aroma carriers and thus unleash the full flavor potential.
The Güde Alpha barrel oak chopper E740/18 is your perfect companion when it comes to demanding cutting work in the kitchen. With its solid, 18 cm long blade, you can effortlessly cut up pieces of meat with bones, whether you want to portion ribs, cut a rack of lamb into chops or expertly carve chicken pieces. The wide and heavy blade shape makes optimum use of the knife's own weight, allowing you to make targeted, powerful cuts through joints and smaller bones without having to exert excessive force.
In classic use, you can easily prepare stocks and broths with this cleaver by cutting bones and cartilage into manageable pieces. The large blade is ideal for pounding in spices and herbs - place peppercorns, coriander seeds or dried chili peppers under the wide blade and crush them with a targeted blow. The chopper also shows its strengths when flattening meat for schnitzels or roulades: Use the flat side of the blade to pound pieces of meat evenly thin.
Used creatively, the Güde chopper is an indispensable tool for Asian cuisine. Use it to cut crispy Peking duck into bite-sized pieces or portion roasted chicken directly on the bone - as is traditional in Cantonese cuisine. Thanks to its width, the blade transports the chopped ingredients effortlessly from the chopping board to the wok or pot. The cleaver is even excellent for chopping firm root vegetables such as pumpkin, celery or kohlrabi when conventional chef's knives reach their limits.
When preparing tartare or minced meat, you can use the heavy blade to finely weigh the meat instead of mincing it - for a particularly juicy, fluffy consistency. The stainless, ice-hardened blade remains reliably sharp and can cope with long periods of work without noticeable fatigue in your hand, while the handle made from historic barrel oak ensures a secure grip.
