About the knife series
The Alpha series from Güde hand-forged blades made from high-quality, rust-free chrome-vanadium-molybdenum steel, which are ice-hardened and precisely sharpened by hand.
The characteristic handle scales are made from oak wood that is over 80 years old, sourced from historic wine barrels, giving each knife a unique appearance as well as exceptional robustness and durability.
Striking details include the hand-fitted handles, which are secured with three stainless steel rivets, including the brand's signature palm rivet, and the typical double bolster for optimal balance.
Each knife in this series is created in over 40 manual steps and combines traditional blacksmithing with unique design to meet the highest standards.

Franz Güde has been manufacturing Güde Solingen since 1910. Solingen has been manufacturing knives by hand – across four generations. Each blade is individually ground, hardened, and balanced by experienced blacksmiths.
The combination of traditional Solingen craftsmanship and high-quality steel makes Güde reliable tools for the most demanding requirements. These are not mass-produced products, but precision tools with character.
A Güde fits perfectly in your hand, retains its sharpness for an exceptionally long time, and becomes a faithful companion in your kitchen – often for decades.
The Güde Alpha Güde combines traditional craftsmanship with modern design and maximum precision – manufactured in up to 55 manual steps in Solingen. The 16 cm long, tapered blade made of high-quality chrome-vanadium-molybdenum steel is hand-forged, ice-hardened, and stays sharp for a long time – ideal for fine cutting work, delicate filleting, portioning meat and fish, or precisely dicing vegetables. The handle is made from over 80-year-old barrel oak, making each handle truly unique and giving the knife character and an excellent feel. Thanks to its handy size and perfect balance, this versatile all-round knife is suitable for both beginners and demanding professionals who value precision and durability. The ergonomic shape ensures fatigue-free handling even during longer cutting tasks. With the Güde Alpha preparation knife, you are investing in an exclusive tool that enriches your kitchen with a particularly elegant and practical piece of German blacksmithing – a knife that combines tradition, innovation, and craftsmanship perfection.
Pro Tip:
Use the Güde Alpha Güde for precise work: With its tapered, 16 cm long blade, the knife is particularly well suited for finely dicing vegetables and for delicate filleting and portioning meat or fish. Hold the knife directly at the transition from the handle to the blade and guide it with short, controlled cuts for optimal control and precise results.

With the Güde Alpha paring knife, you are investing in an exclusive tool that enriches your kitchen with a particularly elegant and practical piece of German blacksmithing art – a knife that combines tradition, innovation, and craftsmanship perfection.
In everyday kitchen use, this paring knife shows its true strengths when cutting and dicing all kinds of vegetables. Whether you're cutting peppers into fine strips, dicing zucchini precisely, or portioning potatoes for a salad, the slightly curved blade allows you to cut effortlessly and smoothly directly on the cutting board. When handling onions, garlic, and chilies in particular, you will benefit from the pointed blade, which guarantees precise cuts without crushing the food.
This knife is an indispensable companion for preparing meat and fish. You can use it to portion chicken breast fillets, cut tender beef into even medallions, or divide salmon fillets into bite-sized pieces. The narrow, flexible blade is ideal for trimming meat and removing silver skin. The pointed blade tip makes it easy to lard a roast —with garlic cloves or herbs, for example—adding that special something to your holiday dishes.
Get creative by rocking the knife back and forth to chop herbs. Place parsley, basil, or chives on the board and rock the knife back and forth rhythmically to finely chop the herbs and release their essential oils. The paring knife also demonstrates its versatility when chopping walnuts or almonds for desserts and baked goods. The sturdy blade can handle even the hardest nuts with ease.
The knife also offers impressive performance for cheese and sausage lovers. Use it to cut salami, ham, or medium-hard cheese into even slices for your snack or antipasti platter. The sharp blade cuts through even tougher sausage skins cleanly without tearing the food.
An insider tip for ambitious amateur chefs: use the paring knife to peel and turn vegetables. With a little practice, you can create perfectly turned potatoes or artistically cut vegetable garnishes that will enhance the visual appeal of your dishes. The balanced weight and non-slip oak handle give you the control you need for precise cutting.
This knife is a practical helper when arranging desserts. Use it to cut strawberries into thin slices, portion mangoes for fruit salads, or slice figs for elegant desserts. The narrow blade leaves clean cut edges and preserves the natural shape of the fruit.
This knife is even ideal for demanding tasks such as filleting smaller fish or deboning trout. The flexible yet sturdy blade precisely follows the contours and allows you to minimize waste. This allows you to get the most out of your high-quality ingredients and work economically like a pro.
