About the knife series
The Güde Alpha combines traditional blacksmithing with elegant design and was developed in collaboration with Michelin-starred chef Harald Rüssel. The blades are forged from chrome-vanadium-molybdenum steel, ice-hardened, and crafted by hand in over 40 manual steps—each blade is hand-sharpened and achieves a hardness of 57-58 HRC. The knife is named after its handle scales, which are made from barrel oak wood sourced from wine barrels that are over 100 years old and have become exceptionally durable and stable thanks to their long maturation period. The characteristic double bolster and aluminum palm rivet trademark ensure perfect balance and optimal handling – a reliable tool for the highest demands in the kitchen.
