About the knife series
The Alpha series from Güde carefully selected handle scales made from wood sourced from wine barrels that are over 100 years old. Their exceptional durability and distinctive grain give each knife a unique look.
The blades are forged from a single piece of stainless chrome-vanadium-molybdenum steel, ice-hardened, and sharpened by hand in over 40 manual steps, ensuring maximum cutting performance and long-lasting sharpness.
Striking details such as the characteristic three-rivet design with stainless steel rivets and the typical palm rivet underline the traditional Güde.
Typical for this series are the balanced balance provided by the double bolster and the perfect ergonomics for fatigue-free cutting.

Franz Güde has been manufacturing Güde Solingen since 1910. Solingen using traditional craftsmanship – now in its fourth generation. Each blade is created in over 40 steps, many of which are still done by hand.
The Solingen-based manufacturer combines proven forging techniques with modern materials: high-quality blade steels, perfect balance, and handles made of fine woods or plastics. Made in Germany means not only origin, but also a commitment to quality.
With a Güde, you bring a piece of Solingen blade culture into your kitchen – a tool that will accompany you for a lifetime.
THE KNIFE by Güde Solingen an outstanding chef's knife that perfectly combines craftsmanship and innovative ergonomics. The hand-forged, approximately 26 cm long blade made of high-quality chrome-vanadium-molybdenum steel guarantees exceptional sharpness and, thanks to a hardness rating of 57–58 HRc, remains particularly long-lasting, sharp, and resistant. More than 40 manual steps are required to create a knife that meets the highest standards of quality and precision – from the first cut to the final polish. The physically optimized design ensures maximum control and efficient power transfer to the cutting point thanks to the characteristic, compact handle, enabling fatigue-free work even with complex cutting tasks such as portioning meat, vegetables, or fish. The elegant handle made of genuine oak makes each piece an elegant unique item, whose individual wood grain gives it an unmistakable character. With its generous blade length, THE KNIFE is suitable THE KNIFE almost all kitchen tasks – from fine chopping and precise filleting to mincing. The combination of modern design, proven Solingen forging technology, and fine materials makes this knife the first choice for ambitious amateur chefs and professionals who value exclusive style, durability, and uncompromising cutting performance.Choose a genuine Solingen masterpiece that combines function, tradition, and unique design—and take your culinary art to a new level.
Pro tip:
When cutting, deliberately grip THE KNIFE using an "overhand grip" – with your thumb and index finger directly on the blade – for maximum control and precision when performing demanding cutting tasks. Use the knife's heavy weight and let the blade fall lightly onto the food instead of pressing down: this allows you to work effortlessly and without fatigue, even with large quantities or hard vegetables.
THE KNIFE from Güde Solingen reallySolingen its own when working with large items and demanding preparations. The wide, 26 cm long blade makes this knife the ideal companion when you want to cut up large cabbages, portion pumpkins or slice roast beef into even slices. The striking blade width makes the knife ideal for rocking cuts—perfect for finely chopping fresh herbs, onions, or garlic without the ingredients slipping out from under the blade.
The ergonomic design with a compact handle made of fine oak encourages you to intuitively use the professional overhand technique: your thumb and index finger grip the back of the blade, while your hand transfers the force directly to the cutting point. This position gives you maximum precision when filleting fish or trimming meat. The considerable weight of the knife works for you – the blade glides almost effortlessly through beef, salmon fillets, or firmer vegetables such as celery and beetroot.
THE KNIFE can also be used creatively when preparing Asian-inspired dishes: the wide blade not only allows you to cut vegetable strips for wok dishes with precision, but also serves as a practical transport surface for transferring the cut ingredients directly from the board to the pan. When cutting up whole chickens or portioning lamb racks, you will benefit from the exceptional sharpness and stable blade guidance, which is not even thrown off course by bones and tendons.
For ambitious amateur chefs, this Solingen masterpiece opens up new possibilities for cutting carpaccio-thin slices of meat or precisely dicing root vegetables for stews and braised dishes. The barrel oak handle scales add a special touch to every task – each knife is unique thanks to its individual wood grain and will accompany you for decades to come. Please note that this high-quality kitchen tool should only be cleaned by hand in order to preserve the sharpness of the blade and the beauty of the wooden handle.
