Bread knife for left-handers  hand-sharpened in Solingen

Anyone who cuts with their left hand knows the frustration: the blade slips into the bread, the slice ends up thin on top and thick on the bottom, and the fresher the loaf, the more uneven the result. It’s not the cutting technique that’s to blame—it’s the knife. The serrated edge on almost all bread knives isground on one side only—specifically for right-handed users.

That’s why Güde bread knives with a left-handed serrated edge: The serrations are ground into the blade by hand in a mirror-image pattern, in the same factory and using the same production steps as the right-handed original. For mixed-handed households, there are also ambidextrous models with serrations on both sides —a knife that cuts straight with either hand.

From the inventor of the serrated edge: In 1941, Franz Güde Solingen Güde with pointed teeth in Solingen . The left-handed version is not a relabeled mass-produced knife, but a blade ground in mirror image from the same production run—available in seven series. Learn more about Güde

Why Regular Bread Knives Are Designed to Be Held in the Left Hand

With a single-sided serrated edge, the serrations are only on one side of the blade; the other side remains flat. This results in minimal lateral force during cutting—the blade tends to drift slightly toward the flat side. Right-handed users don’t notice this because the edge is designed precisely for their cutting motion: the force works with the hand, not against it.

When using your left hand, the effect is reversed. The sharpened side faces the wrong way, and with each stroke, the blade deviates a little further from the vertical. The result: wedge-shaped slices, more effort required, and a crust that tears rather than cuts. With Güde left-handed bread knife, the serrations Güde on the left side of the blade—the cutting angle is correct, and the slices come out straight and even.

Why Güde just sharpen all bread knives on both sides?

The single-sided grind creates a particularly fine, aggressive cutting edge and is considered the top choice when a knife is used primarily by one person. The double-sided serration on ambidextrous models is a well-thought-out compromise for kitchens where both right- and left-handed people use the same knife—such as in families, shared living arrangements, or the food service industry.

Left-handed or ambidextrous? A comparison of grip variations

Güde the serrated edge in three versions: right-sided (standard), left-sided (for left-handers), and double-sided (for both right- and left-handers). A direct comparison of the two special cuts:

For left-handers – left-handed cut

  • Serrations on the left side of the blade
  • Precise, straight cuts when sewing on the left side
  • Fine single-sided cutting edge
  • Same series and blade lengths as the original

For right- and left-handed users – double-sided teeth

  • Serrations on both sides of the blade
  • Cuts straight in either hand
  • Ideal for mixed-household settings and the food service industry
  • The Safe Choice for Gifts
💡 Gift Idea

Not sure which hand the recipient uses to cut—or is the knife meant for the whole family? Then the ambidextrous version is the right choice. It cuts just as cleanly with either the right or left hand.

These Güde are available for left-handers

Like every Güde , all left-handed and ambidextrous bread knives are crafted from a single piece of chrome-vanadium-molybdenum steel, drop-forged and ice-hardened. The serrations on each model are ground by hand individually—which is why these special cuts are produced in small quantities and come with a slight surcharge compared to the right-handed version.

You can choose between the dishwasher-safe classic Alpha with a Hostaform® plastic handle, the Olive, Barrel Oak, Walnut, and Pear series with wooden handles—each handle is unique with its own grain pattern—as well as the Briccole (Venetian canal pile oak) and Balkhauser Kotten editions. The Synchros rounds out the lineup as an ambidextrous model with serrations on both sides. Most series are available with 21 cm or 32 cm blades, each in left-handed and ambidextrous versions.

21 or 32 cm—which blade length is right for you?

For left-handed users, the same rule of thumb applies to blade length as for all bread knives: The blade should be significantly longer than the diameter of the loaf so that you can cut with smooth, long strokes instead of sawing.

21 cm – compact and maneuverable

  • Loaves of bread, baguettes, rolls
  • The All-Around Choice for Everyday Life
  • Fits in any knife drawer
  • Easier to control

32 cm – for large loaves

  • Round sourdough loaves from the bakery
  • One move instead of three attempts
  • Also for melon, pumpkin, and roast meat
  • The format of the Solingen “bread saw”

Forged in a mirror image – Handcrafted in Solingen

The fact that Güde manufactures Güde for left-handers is no coincidence, but rather a logical consequence: The company that invented the serrated edge in 1941 knows best that it cuts perfectly only when it fits the hand that wields it. Every left-handed blade undergoes the same manufacturing process as the original—drop-forged, ice-hardened, hand-ground, and hand-polished. In Solingen, since 1910.
